Amla Achaar Recipe : ਔਲੇ ਦਾ ਅਚਾਰ

Prepare the Amla (Gooseberries):

  1. Wash the amla thoroughly and wipe them dry using a clean cloth.
  2. Cut each amla into small pieces, removing the seeds.

    ਆਂਵਲਿਆਂ ਨੂੰ ਧੋ ਕੇ ਸੁੱਕਾ ਲਓ ਅਤੇ ਠੀਕ ਤਰ੍ਹਾਂ ਕੱਟ ਲਓ।

Roast the Spices:

  1. In a pan, lightly roast the mustard seeds, nigella seeds, and asafoetida for a minute until fragrant.

    ਕੜਾਹੀ ਵਿੱਚ ਮਸਾਲਿਆਂ ਨੂੰ ਹਲਕਾ ਭੂੰਨੋ, ਤਾ ਕਿ ਉਹ ਖੁਸ਼ਬੂਦਾਰ ਹੋ ਜਾਣ।

Make the Achar Mixture:

  1. In a large mixing bowl, combine the cut amla, roasted spices, red chili powder, turmeric, salt, and sugar. Add mustard oil and mix well.

    ਆਂਵਲਾ, ਭੂੰਨੇ ਹੋਏ ਮਸਾਲੇ, ਲਾਲ ਮਿਰਚ, ਹਲਦੀ, ਨਮਕ ਅਤੇ ਚੀਨੀ ਨੂੰ ਇਕੱਠਾ ਕਰਕੇ ਮਸਾਲਾ ਬਣਾਓ।

Marinate the Achar:

  1. Transfer the mixture into a clean, dry jar and shake it well. Leave the jar in a warm place to marinate for 3-4 days. Shake the jar every day.

    ਮਿਸ਼ਰਣ ਨੂੰ ਸਾਫ ਅਤੇ ਸੁੱਕੇ ਜਾਰ ਵਿੱਚ ਪਾਓ ਅਤੇ ਦਿਨ ਵਿੱਚ ਇੱਕ ਵਾਰੀ ਹਿਲਾਓ।
